Chocolate Avocado Pudding

This chocolate avocado pudding is a super easy and a super healthy dessert. It is vegan and gluten free.  It literally takes a few minutes to make and is delicious.  The pudding is thick, creamy and light.  It has a rich chocolate flavour and can be modified to your liking.  This chocolate avocado pudding can be served with fruits, nuts or berries of your choice.

Avocado

Dates

Dates are rich in essential minerals and vitamins.  Dates contain a healthy sugar.  Studies have shown that white refined sugar neutralizes the benefits of chocolate and coco, but dates don’t.  (See the video above)

Your body needs good sugars such as those contained in honey or dates.  Honey boosts your immune system, which is often weakened during stressful times. Honey also gives you a better night’s sleep. 

 

Chocolate Avocado Pudding

Ingredients

·       1 medium sized ripe avocado

·       1Tbs honey

·       2  dates soaked in warm water for 15 minutes or overnight

·       1 Tb spoon fair trade organic cocoa powder

·       1Tsp vanilla extract

·       1/2 to 1 cup unsweetened organic almond milk

Directions

1.     Add all ingredients into a blender or food processor, adding only half of the almond milk to start.

2.      Blend for 1 – 2 minutes until smooth. Adding more almond milk to achieve the desired thickness.

3.     Taste for sweetness, you may want to add more honey or more coco. 

4.     The pudding may be a bit loose initially, but it will thicken after chilling in the refrigerator.

5.     Spoon the pudding into serving bowls, cover and chill in the refrigerator for at least 20 minutes or until ready to serve.

6.     Just before serving top with berries, sliced fruits, toasted hazelnuts, walnuts or slivered almonds. 

7.     Enjoy!  And don’t tell your guests that this is avocado pudding until after they taste it. 😉
